Chicken Corn Soup

I used to believe that I was the luckiest woman in the world to be with a man who could cook the most amazing and delicious dishes that my taste buds have ever experienced. However, I am now convinced that I am the luckiest woman ALIVE to know that my darling, beloved Abaseen can make Chinese style chicken corn soup; and that too from scratch!

Okay, before I go any further, my reader needs to know just how much I am obsessed with Chinese style chicken corn soup. I first got hooked on it in high school; it has been almost a decade and I love it more now than ever. I travel long distances to find restaurants that serve this particular sinfully delicious soup (because not all Asian restaurants serve them). Little did I know that my beloved already has the mad skills to make this soup; and not only does he make it healthier but also ten times more delicious!

Anyway, for the past couple of days I’ve been eating nothing but this soup; and it’s only a matter of time until I run out! I know I rely heavily on my darling to cook for me, but I think it’s high time that I learned how to cook this soup by myself; I mean it’s sad enough that I never managed to learn it, considering how much I love it.

Here’s the recipe for those who also want to try making it themselves (if you haven’t tried the soup already). Believe you me, you will be HOOKED too! Yum!

 

Chinese Chicken Corn Soup Recipe- Quick easy cook

PREP TIME: 1 MIN

COOK TIME: 15 MINS

READY IN: 20 MINS

YIELD 4  SERVINGS

Ingredients:

2 cup chicken broth, canned

1 cup chicken breast,boneless

1 teaspoon soy sauce

1/2 onion

1 cup sweet corn

Procedure:

1. Clean chicken breast, cut into small pieces.

2. Add all the above ingredients: chicken broth, chicken breast, soy sauce, onion, sweet corns, and 1 cup of water in a saucepan, bring to a boil, cover, simmer 10 mins over low heat.

3. Turn off heat, let stay 5mins, serve.

Chinese Chicken Corn Soup Recipe- slow cook

PREP TIME: 2 MINS

COOK TIME: 90 MINS

READY IN: 100 MINS

YIELD 4  SERVINGS

Ingredients:

2 small fresh corn on cob

1/2 small chicken with bone(about 100g)

1 teaspoon soy sauce

1 block of ginger

1 piece of scallion(or 1/2 onion)

1 teaspoon salt

1 teaspoon rice wine

Procedure:

1. Clean chicken, cut into small blcoks. Wash in boiling water, take out quickly.

2. Add chicken blocks in a saucepan, add 4 cup of water, ginger, scallion, bring to a boil over medium heat. Turn to low heat, add rice wine, soy sace, simmer for 60mins over low heat with cover.

3. Add corn, continue to cook 20 mins over medium heat. Add salt, cook additional 10 mins with cover. Turn off heat, let it stay 5mins. Serve.

    • Ohhh, but Madi this isn’t just ANY chicken corn soup; THIS is Chinese style, which is very thick, creamy, and tastes like freakin’ HEAVEN! Girl, when I come visit you (hopefully very sooooon), you’d best make this for moi; AND double chocolate fudge cheesecake; AND sushi; AND just everything else! Ugh, I am already drooling here and it’s not even 10 am yet! Love you, jaan! ❤
